Someone on Weigh Watchers Connect mentioned an app called Drizzle me Skinny so I decided to check it out.  Let me just say this app is fantastic.  Nothing really fancy but some great recipes that are point friendly.

Last night I was wanting something sweet but I only had 4 points left so I went on the app and found a recipe for Honey nut tarts.  These things are delicious and really curbed my sweet tooth.  I made a few adaptations to her recipe because it was for mini tarts and was baked in the oven.  I did not have a mini muffin pan and I wanted to use my air fryer.  Here is what I came up with.

Honey Nut Tarts (or mini tarts)
6 won ton wrappers
1/4 cup chopped almonds and walnuts
1.5 tbsp honey 
1 tsp vanilla
1tsp sugar (I used truvia)
2 tbsp water
Spray muffin cups overlay two wonton wrappers and place in muffin cups. Full with nuts. I sprayed a little Pam over Top. Fry in air fryer 350 degrees for 5 minutes.
While frying combine honey vanilla sugar and water and heat to boil. When tarts are finished drizzle honey mixture evenly over top. So good!!
To make the original mini tarts you need to cut your wrappers using a pizza cutter into 4 equal sized squares so you have 24 squares.  Then of course line them up in the mini muffin pan.  

One mini tart is 1 point so I figured 1 of the regular size tarts to be 4 points.

Blue rings and bracelet

I have just recently started making wire wrapped jewelry.  I enjoy making these tiny works of art.  I am going to be selling my items in a small local artisan shop beginning in April.  I usually make a piece then wait a week to put it in the shop.  So if you are interested in purchasing a piece let me know!  Here are a few pieces from today.

These pretty rings are blue stones with silver coated copper wire.  The first is a crystal cut glass bead and is a size 8.  The second is a cateye bead in a size 7.5.  Each ring is $10.


This is a bracelet I made using the same cateye bead as the ring above.  Wouldn't they look great together?  The bracelet is $15.  

Don't forget I am going to be putting these in the shop next week so if you are interested let me know.  Also I do custom orders so if you see something you like ask me about making it in your color choices.  My pieces are one of a kind but I can get close to recreating what you see.

Strawberry Banana Muffins

Decided to do a little air fryer experiment this morning.  I have been wanting to try the Weight Watchers Strawberry Banana muffins so thought I would give them a go in the air fryer!

I used a recipe I got from one of the WW meetings a few weeks ago.  I am not the biggest fan of oatmeal just as oatmeal but I love to eat it in a different form, such as a muffin.  Also I can sort of pretend the muffin is cake and I love cake!

First I mixed the recipe.  I don't have my silicone cupcake liners yet ( I just ordered some from Amazon) so I decided to use the paper muffin/cupcake liners.  I was so nervous using them because I was afraid of starting a fire, but everything went fine.  I am still going to wait till I get my silicone cupcake molds in the mail for the next time. 🙂
Also the recipe says to use mini muffin pans but of course I did not have those.

Next I set my temp for 350° and the time for 10 minutes.  I really was afraid of starting a fire with the paper liners so I kept checking my muffins about every 2 minutes.  After about 4 minutes I decided I needed to turn the temp down because they were browning on top but not cooking in the middle.  I turned it to 315°.  This really seemed to help stop the tops from browning.

When they were finished I took them out (use tongs or something because they were hot!) And this is what I got.

So I am pretty impatient and did not want to let them cool before I tried one.  The muffin stuck to the liner 😕.

Even though it was not as pretty as I would have liked I ate it anyway.  I must say they were very good.  I do think next time I will start the heat at 315°.  Let them cook for about 8 minutes then turn the heat up to 350° to brown the top (if it needs it).

So for looks I would give myself a thumbs down, but for taste I get a thumbs up!

So here is the recipe.  I used Weight Watchers oatmeal but I am sure you could use whatever oatmeal you have on hand.

Weight Watchers Strawberry Banana Muffins (3pts for all!!!)

1 container WW strawberry oatmeal
1/2 tsp baking powder
1 mashed ripe banana
1 egg white (or 3 tbsp liquid egg whites)

Combine ingredients and mix well.  Spoon into mini muffin pan sprayed with nonstick cooking spray.  Bake at 350 for 14 minutes in regular oven or 315 for 10 minutes in air fryer (I have a Nuwave Air Fryer).

This is new for me!  I haven't blogged in quite some time.  I want a place to put recipes and creations and my journey to a happy, healthy life, so I decided to start this blog.  I hope you will bear with me as I learn to navigate this new adventure.
